I cannot think of anyone who doesn’t like Satay. The thought of serving this dish at a dinner party can be daunting but here’s an easy option. The flavours would be greatly improved if you can cook the meat over a charcoal BBQ but you can cook the meat in a hot frying pan or under a hot grill.

500g chicken pieces (use a mixture of breast and thigh meat)
100g Nonya Secrets Spicy Peanut sauce
30g granulated sugar
30g coriander powder
1 tbsp dark soy
2 tbsp vegetable cooking oil
Bamboo skewers, soaked in water
Garnishes: 1 red onion, peeled and cut into quarters, cucumber and rice cakes
Dipping sauce: Nonya Secrets Spicy Peanut sauce

Slice meat into strips of 3 cm x 1 cm thickness.
In a mixing bowl combine the Spicy peanut sauce with sugar, coriander powder and dark soy and mix well.
Rub the spice mixture into the chicken pieces and leave to marinade for an least 30 minutes or up to 24 hours if time permits.
If you want to serve the satay on bamboo skewers, thread the chicken pieces onto bamboo skewers half way up the sticks.
To cook the chicken satay preheat the grill or frying pan and brush the meat with vegetable cooking oil to stop them from sticking. Cook on high heat for 5-10 minutes, turning over the sticks to cook evenly on both sides. When the meat is cooked transfer onto serving dish and serve with spicy peanut sauce, cucumber slices and red onions (quartered),
