Steamed pork and prawn dumplings


  • 8 oz (225g) minced pork
  • 8 oz (225g) green tiger prawns (peeled and deveined)
  • 1 tbsp light soy sauce
  • 1 dsp sugar
  • ½ tsp salt and pepper to taste
  • 1 tsp sesame oil
  • 2 oz (30g) water chestnuts
  • 6 oz (175g) wanton pastry – makes about 30 to serve 5-6 people

Combine all the ingredients, except wanton pastry, in a food processor and blend for a minute or so until all the ingredients are well combined and chopped.
Put 1 dsp dumpling filling into the middle of the wanton pastry and bring sides up to form a cup. Pinch the sides all the way round to form pleats but leave the top of the meat exposed.
Brush each dumpling with vegetable oil to prevent sticking. Place on a heat resistant plate and steam for 10-15 minutes until cooked.
Serve immediately as a starter with Nonya Secrets chilli oil and/or soy sauce or even hoisin sauce.
